When I was pregnant, I loved eating a chocolate chip muffin every day at work for an afternoon treat. I found a great brand that makes them gluten free, but not paleo. Even though, I don’t follow the paleo diet perfectly, I try to make as many meals and desserts paleo friendly as I can. I wanted to try making paleo chocolate chip muffins just as good as the gluten free ones I used to enjoy. After altering the recipe a few times, I finally figured out one that I love.
Making these Paleo Chocolate Chip Muffins with Coconut Flour
This recipe for paleo chocolate chip muffins is made with coconut flour. I always try to make most of my desserts with coconut flour as it is a much healthier flour.
Coconut flour is nutrient dense and it won’t cause spikes in your blood sugar levels like white flour does. Conventional flour contains a high amount of carboyhdrates, which your body breaks down into simple sugars. This can cause your blood sugar levels to rise and then drop significantly. I’ve found that I not only feel better when I try to avoid white flour, but my skin is also clearer too.
The Ingredients I Used in this Recipe
These paleo chocolate chip muffins are gluten free, grain free, nut free and dairy free.
If you are trying to avoid dairy, the only ingredient to watch out for with this recipe is the chocolate chips. Some brands of chocolate chips do contain dairy. So be sure to buy a brand that is labeled as dairy free. Dairy free chocolate chips should be pretty easy to find. I usually buy them at our local grocery store and even Target has them. You can buy them online too if that is easier.
Using Non-Toxic Baking Cups
I usually make muffins including these paleo chocolate chip muffins in baking cups. I always make sure to get the natural unbleached baking cups.
Many brands of baking cups contain chemicals that can be leached into what you’re baking. Some of these chemicals can include chlorine and the chemicals they use to bleach or color the liners. I found these awesome natural unbleached and chlorine free baking cups that are great for baking and healthier too.
Another option is just using a muffin pan without any baking cups. I’ve found that when I don’t use liners in the pan, the muffins brown more on the edges. That’s why I prefer to use the baking cups.
Paleo Chocolate Chip Muffins
Delicious paleo chocolate chip muffins made with coconut flour. These muffins are soft, fluffy, and moist. They are a healthy dessert and are gluten free, grain free, and dairy free.
Mix all ingredients in a large bowl.
Use a spoon to the scoop the batter into the baking cups. Fill them about 3/4's full.
Bake them at 350 degrees for about 20 minutes or until lightly browned.
If you use coconut oil in the recipe, you may want to let the eggs warm up to room temperature before adding them into the mix, otherwise the coconut oil can harden and clump.
